After a long day of watching random movies on the couch, Dinner Time knocked on the door and our empty stomachs. Dear Hubby’s first choice is always pizza and since he’s become proficient at making his own, that’s what was on his menu. I sort of wanted to go in the same direction, but with a healthier zip to it. So I created Salsa Pizza Slims.
What do you need?
- Finely chopped garlic
- Olive oil – a few healthy spritzes
- Yellow and orange peppers, sliced
- Salsa of your choice in heat and consistency
- Grilled chicken breast – shredded
- Chopped, fresh cilantro
- Fresh tomatoes, chopped into small pieces
- shredded cheese
In a hot pan that’s been sprayed with olive oil, cook up garlic, peppers, and salsa.
Precooked ingredients = quick dinner preparation = happy blogger
I had precooked chicken breast strips, and added them to the mix.
I love green salsa for some reason.
Once the chicken and peppers are just about done, add in the cilantro.
Spray a cookie sheet with a bit of olive oil cooking spray before placing the sandwich thins. I like to bake them using the broiler, mostly because it only takes about 90 seconds to make delish pizzas this way.
I topped some Sandwich Thins with 1 Tbsn of salsa before spooning the chicken and peppers mixture on top. Sprinkle cheese on top.
Out of the oven in 90 seconds and ready to be enjoyed!
