Weekend Wrap Up Quesadilla Style

Happy Monday to my Fancy Oatmeal Readers!  And a very happy, belated Easter wish to all of my Russian Orthodox friends!  I hope you enjoyed your weekend, and have been able to relax and get rejuvenated for the upcoming week.

I must warn you that there is very little that will hold this post together, thematically.  Very anti thematic.  Themeless.  I mean to say, without a theme.  Alright.  I’m done.  So I’m just going to rattle off some stuff that happened this weekend, and hope that I don’t induce a tedium coma.

1.  Dear Hubby and I finished season two of Downton Abbey (yes, I had to backspace there too) on Saturday morning.  Usually, I try to get my run in before 10am at the latest, but we had two more episodes to go, and one must make exceptions when the fate of Downton is at stake.   As the credits rolled, I was all

2.   I collected myself after the amazing season finale, and jumped on the treadmill.  I pumped out a 7 mile run, something I haven’t done in over a month.

I felt really good throughout this run.  I started getting a little rumble in my stomach around mile 6, and knew that I would have to start preparing myself for these types of urges as the runs got longer.  I needed to figure out a way to deal with this situation.  Perhaps a new running technique?

Mind over matter.  I repeated to myself, “My body is content.  My body is calm” over and over again.  Eventually I was so wrapped up in my mantra that I forgot about having to use the restroom and crossed “the finish line” at 54:46.

On Sunday, I planned on running an Easy Run of 3-4 miles.  Once I got my legs pumping, I felt so good at that pace that I kept it up and turned it into a 40 minute Tempo Run.

3. After my run, I decided to treat myself with a little something special.  I wasn’t sure what to fix until Dear Hubby started talking about Taco Bell, and then it hit me!  I could make chicken quesadillas better than any fast “food” chain!

It was pretty simple, and I’m sort of irritated with myself that I didn’t realize how quickly this meal could go together.

And I had all the ingredients in the house = rarity.

How to Make a Quesadilla for Dummies:

Heat a pan to about medium high heat.  I have a Misto sprayer, but you can use some sort of cooking spray to coat the pan.  Place one tortilla shell on the pan, and sprinkle a layer of cheese on top of the tortilla.  We also have a lot of canned chicken breast, so I threw some of that onto the tortilla as well.

 In my mind, you need to have a layer of cheese, then whatever other filling material, and then MORE cheese to complete the sealed quesadilla.  Since we don’t have an official machine that would compress the two tortillas together, the cheese is vital…probably not true at all.

Slap on the second tortilla and press the living daylights out of your quesadilla.  Think SPANX.

Pressing around the outside edges helps to seal the tortillas together with the help of that adhesive cheese.

It only takes about two minutes per side and an obsessive amount of checking to make sure that you don’t burn your quesadilla.

Once you’re satisfied with the level of grilling, slip that baby on to a plate and slice ‘er up!  I recommend using a pizza cutter for equal-est division of slices.

Downton. Up Five

Five miles up on my goal of 100 miles in April, that is.  This morning, after getting caught up on the new episode of Glee (thank God the show is back, but a little disappointed at the lackluster bridge from Quinn’s car accident to her showing up without a scratch, yet in a wheelchair.  I was hoping for a few episodes of hospital-style drama) I set forth to run five miles on the treadmill.  This would be one of my “fun runs.”

A.M. Run:

I was pleased with my splits, although I suppose I should be paying more attention to my pace DURING the run.  I was hoping for an avg of 8’00″ – 8’10″ pace since this was supposed to be an easier run.  Granted my times were a slower today than yesterday, I just want to avoid unnecessary injuries.

In other Wednesday news, we’re still alive and kickin’ here on St. Paul Island, even though our phones are not.  They have been down for the past week or so.

The phone company said, very boldly, that they would not come out to the island to fix the problem until there was enough demand for it.

If only we all had the work ethic of Mr. Carson.  This is just one of the few things that Dear Hubby and I will not miss once we leave the island.

In other news, last night the first disc of the second season of Downtow Abbey showed up at our door.  I had heard from a few people that they enjoyed the show, and my interested was really peaked after this lady blogged about her obsession of all things Downton and Reeces.

Here is a brief synopsis of the show from the Masterpiece/PBS website:

It’s 1912, and life in the Edwardian country house of Downton Abbey is idyllic and bustling for the Crawley family, aided by their cadre of servants. Robert, Earl of Grantham, his American heiress wife Cora, and their three daughters, along with Robert’s mother Violet, have lived largely uncomplicated lives. But the sinking of the Titanic hits home in an unexpected and dramatic way — Lord Grantham’s heir, James Crawley, and his son Patrick have perished. It’s personally agonizing (momentarily) for daughter Mary who was supposed to marry Patrick. On a grander scale, suddenly all the predictable succession plans have gone terribly awry, and unheard of questions now loom large — Who will be the new heir to the earldom? And what will happen to this distinguished estate, now in jeopardy?

In the other end of the grand home, the servants all have their own sets of conflicting personalities and personal interests to attend to.  Many are totally devoted, such as Mr. Carson, Mrs. Hughes, and Anna.  Yet there are others who have a more Iago-ian style of servitude: one who looks dutiful and devoted, but who’s really looking out for himself.  By pretending to serve their lords, these men get rich, and when they’ve saved up enough they can be their own masters.

I have become much more a fan of period-piece films and television shows since meeting Dear Hubby.  As of late, our DVR schedule consists of :

  • Game of Thrones
  • The Borgias
  • Boardwalk Empire
  • Lord of the Rings I, II, and III (blasphemy, I know)

And now Downton Abbey, which I always type “Downtown” first and then backspace my ass off.  I am actually enjoying the new additions to my leisure time.  And you know it’s legit because we’ve been married for almost two years and are WAY beyond the point where I have to pretend to have common interests with Dear Hubby, hence the name “Hubby.”

Quite right, Countess.  Quite right.

Thankful Thursday

One might think that being in a full-fledged flu fortress that I would have nothing to be thankful for, unless you count my dazzling alliteration skills.  Yea, I don’t think you’re ready for THAT jellay!   Anyways, there are a handful of things that I am thankful for and looking forward to:

1.  I am thankful that Charmin is ultra soft.

After going through three rolls of TP in two days, thanks to my ever-dripping nose, both myself and my sensitive skin are thankful that I haven’t wiped away my epidermis into a raging raw state.

2.  I am thankful that a trip to the doctor is only a 3 minute round trip, including waiting room wait time.  Our clinic is well stocked with medical professionals who took me right in after Dear Hubby got out of work yesterday.  The only bummer about my trip was that I was diagnosed with the flu, and I just have to ride this one out until it’s out of my system.

3.  I am thankful we have the first season of Downton Abbey on DVD waiting for our four-day weekend that starts tomorrow.  After reading several reviews and posts from this gal, I was utterly confused inspired to get on board.

4. It’s March Madness, baby!!!!

I’ve got Draymond Green and the Michigan State Spartans taking it all the way.
